Pappardelle with shrimp and smoked salmon

Do you want to surprise your family and friends with an elegant meal? This recipe will only take you 20 minutes to put together (but they´ll think you were slaving in the kitchen all day).
Many times we mistakenly think that recipes are too difficult or time consuming to preparebut it´s actually the opposite, they’re easy to prepare and you only need a few flavorful ingredients to make the dish come together, like in this case, smoked salmon.
Hope you enjoy this recipe as much as eating it!

Delicious pappardelle served with shrimp and smoked salmon. An easy recipe to prepare perfect for a romantic dinner or with your family.

Pappardelle Pasta with Shrimp and Salmon

Yields: 4 servings

Ingredients:
1 pack of pappardelle pasta
16 large peeled and cooked shrimp
3 oz of smoked salmon
2 tsps olive oil
1 small red onion (diced)
2 garlic cloves (finely chopped)
1 tsp sweet paprika
2 pear tomatoes (diced)
1 tsp of capers
1 cup white wine
Salt and pepper to taste
1 tsp of cilantro flakes

Instructions:
Cook pasta according to the instructions. Then set aside. Heat the oil on medium-low hear and sautee onion and garlic stirring frequently making sure it doesn´t burn. Then add tomatoes and capers and season to taste with salt and pepper and the paprika.
Add the wine and bring to a boil. Reduce the heat and add shrimp mixing everything well with the sauce. Once that is mixed add the pasta and mix well again. Lastly add the salmon and cilantro and mix well once more. You can top with grated cheese.

Tips:
You can substitute the white wine with shrimp broth.(1 shrimp flavored bouillon diluted in 8 ounces of water) The cilantro flakes can also be substituted with parsley flakes.
